Oh my, I’m a slacker! It has been so long since my last post I forgot my password and received an error message.. I will try to be more diligent!
Lucky for you all I stopped by the library today and hit the jackpot!
So let’s see:
-We have Suze Orman to help make us financially stable, so that I can work from home as a blogger 😉
-Books about the dark side of the food industry so that I can continue to eat well (and have something to comment on)
-Jillian Michaels workout DVD… because my AM bootcamps are on an “off” week this week
-WordPress for Idiots, so that I will be more savvy when financially well off enough to blog about food and workouts!
-Fifty Shades of Grey, which I actually heard was pretty bad but I’ve been on a 7 month waiting list so I may as well try it
-And Chelsea Handler who, by the way, was in the relationship self help section of the reference area HAHA! She is moving on up in the world, soon she will be doing couples counseling!
Hopefully I can pull myself away from the books long enough to write some more!
Oh my goodness, I have a confession to make….
While I made an awesome shrimp dish, I forgot to take a picture because I’m hooked on the abc show Extreme Makeover Weight Loss Edition!!! It is ridiculous and I’m ashamed to admit how much I enjoy but I can’t lie, this is the 4th episode I’ve watched on demand 😉
The show follows one person for a year per episode so you see them lose 200+ pounds. It is actually pretty touching watching them overcome their issues and become empowered. It definitely puts things into perspective, I can wake up and work out… no excuses.
However I will say I seriously hate tv shows nowadays, this should not be entertainment.

My first blog, how exciting!
I decided to start with the blueberry muffins I made tonight, they are delicious and nutritious!
I made the recipe up as I went along to follow my Paleo/Whole30 lifestyle — just veggies, meats and fruits.
First things first preheat the oven to 350 degrees.
Then I mixed the wet ingredients:
– 3 eggs
– 1/3 cup coconut oil (melted or else you’ll have clumps in your batter
– 1 cup almond butter
– 1 tablespoon apple sauce
– teaspoon lemon juice
Next I added the dry ingredients:
– 1 cup almond meal
– 1 cup coconut flakes
– 1 cup chopped walnuts
– pinch of salt
– cinnamon (your preference, I used a teaspoon)
After the batter was all mixed up and creamy I folded in the frozen blueberries, about 2 cups worth.
I filled my silicon cupcake liners about 2/3 full (batter will rise slighty) and popped them in the oven, timer set for 20 minutes. Some needed 10 more minutes so monitor and make sure they don’t burn!
